Why moisture is the first number to read
Dried chili is a moisture-sensitive product. If moisture is too high, mould risk rises during sea transit; if it is too low, the pods become brittle and break during handling. Export specifications therefore focus on a narrow moisture band agreed with the buyer.

Colour and pungency report the batch
Colour and pungency are the other two pillars. Buyers usually ask for a minimum colour value and a pungency range, and both should be confirmed by a certificate of analysis issued before shipment.
- Moisture band agreed in the contract and confirmed on the COA
- Colour value checked on a recent sample
- Pungency range matched to your product line
- Stem and impurity level inspected before packing
